Day 2: MONDAY

Explore Carcassonne, the most complete medieval fortified city in existence today. Dating back to the Gallo-Roman era, Carcassonne has 52 watchtowers, a portcullis and an extraordinary repertoire of defenses that made it resilient to the many armies that tried to storm it. This afternoon, cruise the 330-year-old Canal du Midi. Proceed through its trademark locks, passing L’Epanchoir, one of the canal bridges designed by Pierre Riquet. Arrive in La Redorte and wander through this village, famous in the 11th century for its basket weaving.

Day 3: TUESDAY

Cruise under the shade of the plane trees that line the canal, gently circling the contours of land to reach the port of Homps, once an important command post for the Knights Hospitaller. This afternoon, visit Minerve, the ancient capital of the Minervois. It boasts a 12th-century Cathar fort surrounded by deep limestone gorges. Besieged by Simon de Montfort in 1215, the fort’s hilltop location affords spectacular views. Continue cruising to a picturesque mooring under the trees, where you have a perfect opportunity to try your hand at a game of pétanque, a form of boules. Afterward, sit down to an al fresco dinner on board.
